Barrels and Sours from Ministry of Beer
If you're a fan of sours then boy oh boy do we have a treat for you.
We recon Ministry of Beer make some of the best barrel aged sour beers in Australia. But don't just take our word for it, try them for yourself and we promise that you won't be disappointed.
2 x Kettle Sours - These beers are soured using lactobacillus bacteria. Once the beer reaches it's ideal acidity it is boiled to kill all those sour loving bugs and stop any further reactions. the result is a very clean and crisp sour base that allows any additional flavours to shine through. In this case we've got raspberries and Mosiac hops, yum :)
3 x Barrel Aged Sours - This is where it gets really good. Barrel aged sours add and extra layer (or 20) of complexity to the beer. Cultures of different bacterias and yeast are often added to achieve the desired flavour and acid profile in the beer with Brett (the yeast, not the brewer) often being the star of the show. Ageing in barrel not only gives some great oak/wine flavours but also gives all of these intense flavours time to melow together. Brett (the brewer this time) checks on these often and when the time is right throws them in a fancy bottle for us to enjoy.
